I love trying new recipes and this one was created by just adding as many whole ingredients that I can find to put this together. I used homemade applesauce. I am sure you can use store-bought, but I leave small chunks of apples when I make my applesauce so this is a plus in this recipe. The protein powder and seeds also add some nutritional benefits.

 Ingredients

2 Eggs

1 Cup homemade applesauce

1/2 Cup full coconut milk

4  Tbsp maple syrup

3 Tbsp extra virgin olive oil

1/2 Tsp vanilla essence

1/2 cup water

2 Cups white whole wheat flour

1/4 cup protein powder (optional)

1 1/2 Tsp baking powder

2 Tbsp flaxseed

1 Tbsp chia seeds

3 Tbsp hemp seeds

1 Tsp cinnamon

Compote ingredients

1 Cup Fresh Strawberries or combination of berries

1 Tbsp coconut palm sugar

1 Tsp cinnamon powder

Directions

  • Start with the compote, combine the last three ingredients in a pot on low heat, stirring occasionally
  • Once strawberries are soft set aside.

Now is time for the waffles.

  • In a large bowl, using a whisk combine all the wet ingredients (first 7 ingredients).
  • In a separate bowl, mix all the dry ingredients (following 7 ingredients)
  • Add dry ingredients to the wet ingredients and mix well and set aside.
  • Preheat waffle maker according to waffle maker instructions.
  • I have a cast iron waffle maker, so I use cooking spray to prevent sticking.
  • Once waffles are made, top with your berry compote and warm maple syrup (optional).
  • Waffles can be stored in the freezer for up to 6 months. When ready to use just place in a toaster or heated oven and enjoy!

Note: I use only organic and aluminum-free ingredients
