Quinoa and Berry Breakfast Cereal with Homemade Cashew Milk

I love steel cut oats however, it is not that nutritious. So I decided to replace it with quinoa and I ended with this delicious, filling,  and nutritious breakfast. 

I started with Vanilla “Milk” ( also can be used for vegan ice cream) 

2 cups organic cashews

2 cups purified water

1/4 organic cup maple syrup

2 tsp organic vanilla powder

Blend all ingredients in a high-powered blender. I use my Vitamix. This recipe is perfect for vegan ice cream as well. The following step will create a nice Vanilla Vegan Ice cream.

Place the  Vanilla “Milk” in the refrigerator overnight then add it to your ice cream maker following the manufacturer’s directions. Once completed, enjoy, or freeze. 

Quinoa and Berry Breakfast Cereal

Okay, so here goes. 

1 cup red quinoa

1 cup Vanilla “Milk” ( any non-diary milk) 

1 cup of water

1 tsp cinnamon

1 cup blueberries

1 cup blackberries or strawberries ( or a mix of both)

1/3 chopped pecans (optional) 

Combine the quinoa, vanilla milk ( recipe above), water, cinnamon in a large saucepan over medium heat. Cook, stirring until the mixture comes to a simmer. Cover, reduce the heat to low, and cook the quinoa until the liquid has been absorbed, 10 to 15 minutes. Then out the stove and it steams. 

Once completed, place in a bowl and stir in the berries and nuts. Serve warm…
