In a blender, combine the plant-based milk, full-fat coconut milk, maple syrup or dates, vanilla extract, cinnamon, nutmeg, and cloves.
Blend until the mixture is smooth and all the ingredients are well incorporated.
Taste and adjust sweetness or spices according to your preference.
For a spirited version, add your desired amount of rum or bourbon and blend briefly to combine.
Refrigerate the eggnog for at least an hour to chill and allow the flavors to meld together.
Before serving, give it a good stir, as ingredients might settle.
