8 small red skin potatoes ( quartered)

1/2 tsp herbs (dill, parsley, basil, rosemary )

2 Tsp olive oil

Salt and pepper (to taste)



Preheat oven to 350 degrees. Line a baking sheet and spray with olive oil. Combine red skin potatoes, olive oil, herbs, salt, and pepper. Mix through and set on a prepared baking sheet.

Note: I used fresh herbs, which turned out great!
