This is not your typical paella dish but tastes just as good or even better. This dish consists of only vegetables, so it is one I would call a “good for your meal”

Vegan Paella


  • 1 12 oz pack cauliflower rice
  • 2 Tbsp olive oil
  • 1 cup frozen peas and carrots
  • 1 can black beans
  • 1/2  cup diced asparagus
  • 1 small red bell pepper diced
  • 1 small onion diced
  • 1 tsp oregano
  • 1 tsp parsley
  • Salt and pepper to taste


  • In a large cast iron, or a very large skillet, heat 2 tablespoons of olive oil over medium heat
  • Add bell peppers and onions and cook until slightly brown
  • Add oregano, parsley, peas and carrots, and asparagus
  • Once vegetables are  cook add the beans followed by the cauliflower rice
  • Season with salt pepper to taste
  • Remove from heat and let stand, covered for 10 minutes
